Fruit Cake Cookies

Ingredients

1/2 cup butter, softened
3/4 cup sugar
1 egg, slightly stirred
1-1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2-1/2 cups pitted dates, chopped
1/2 cup candied cherries, chopped
1/2 cup candied pineapple, chopped
3/4 cup Brazil nuts, toasted, chop coarsely
3/4 cup almonds, toasted, chopped

Instructions

Preheat oven 375 degrees. In a large mixing bowl, cream together butter and sugar. Add egg, mix well. In separate bowl, combine flour, baking soda, salt and cinnamon. Gradually add dry mix to creamed mixture; mix well. Fold in fruits and nuts. Drop by teaspoon 2 inches apart onto greased baking sheets. Bake at for 8-10 minutes or until lightly brown. Cool on wire rack. Yields seven dozen.
