Diabetic Cake

Ingredients

2 cups raisins
4 cups water
2 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 cup margarine
2 eggs
2 teaspoons sweetener
2 teaspoons vanilla

Instructions

In a medium saucepan, combine raisins and water and bring to a boil. Reduce heat and simmer for 20 minutes; cool. Sift and then combine flour, baking soda, salt and cinnamon; add to raisins and mix together well. Add margarine, eggs, sweetener and vanilla and stir to combine. Pour into tube pan. Bake at 375 degrees for 1 hour.
