Apple-Raisin Cake (Diabetic)

Ingredients

1 cup raisins
1/2 cup water
1 cup unsweetened applesauce
2 eggs
2 tablespoons liquid sweetener
1/2 cup oil
2 cups flour
1 teaspoon baking soda
1/2 teaspoon nutmeg
1 teaspoon vanilla

Instructions

In a small saucepan over medium heat, cook raisins in the water until all the water is absorbed. Cool. Add applesauce, eggs and sweetener; mix well. Add oil and mix again. Sift together flour, baking soda and nutmeg and stir in mixture. Add vanilla. Bake at 350 degrees in a 9x13x2-inch pan until golden brown (usually about 40 minutes).
