Pumpkin Cookies

Ingredients

1 cup margarine
1 cup sugar
1 egg
1 cup pumpkin
1 teaspoon vanilla
2 cups flour
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt

Instructions

Preheat oven to 350 degrees. Cream together margarine, sugar, egg, pumpkin and vanilla. Add flour, cinnamon, pumpkin pie spice, baking powder, baking soda and salt. Mix. Chill dough 15 minutes or more before dropping by rounded tablespoon onto ungreased cookie sheet. Bake for 10 to 12 minutes. Allow cookies to cool. Frost with powdered sugar frosting (optional).
