Zucchini Bread

Very moist and delicious recipe can be doubled.

Ingredients

3 eggs
1 cup vegetable oil
2 cups sugar
2 teaspoons vanilla
2 cups peeled and grated zucchini
1/3 cup crushed pineapple, drained
3 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 cup chopped walnuts (optional)

Instructions

Preheat oven to 325 degrees. Mix eggs, oil, sugar, vanilla, zucchini and crushed pineapple well in a large bowl. Then add flour, baking powder, baking soda, salt and cinnamon. Stir with a mixer until well combined. Add nuts if desired. Pour into greased loaf pans, either a single 9x5x3-inch pan or 3 smaller 8-1/2x 4-1/2 x 2-1/2-inch pans. Bake for 1 hour. Check to see if done by sticking toothpick into middle of bread. If it comes our clean, the bread is done.
