Apple Bread

Ingredients

1 1/2 cups flour
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon soda
3/4 cup oil
1 cup sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups chopped apples

Instructions

Preheat oven to 325 degrees. Grease a single 9-1/2 x 5-1/2-inch loaf pan or 3 smaller 6 x 3-1/2-inch loaf pans. Stir together flour, cinnamon, salt and soda. Set aside. Cream together oil, sugar, eggs and vanilla. Add slowly to dry ingredients. Fold in chopped apples. Pour into prepared loaf pan(s). Bake 50 to 60 minutes.
