Marinated Bean Sald (For Diabetics)

Ingredients

1 can (15 ounces) wax beans
1 can (15 ounces) red beans
1 can (15 ounces) green beans
1 can (15 ounces) kernel corn
1/2 cup chopped celery
1/4 cup sliced green onions
1/4 cup chopped pimento
1/4 cup chopped green pepper
Dressing:
1 tablespoon oil
3/4 cup sugar
1/3 cup wine vinegar
1 teaspoon salt

Instructions

Drain liquid from beans and corn. Combine them in a large bowl combine with celery, onions, pimento and green pepper. Set aside. For dressing, combine oil, vinegar and salt in a microwave-safe bowl. Microwave 30 seconds. Pour over vegetables. Chill overnight before serving.
