Easy Beef Enchiladas

Ingredients

1 pound ground beef
1 package (about 1 ounce) taco seasoning mix or burrito seasoning mix
1 can (16 ounces) refried beans
1 can (10 3/4 ounces) condensed cheddar cheese soup
1 medium onion chopped (about 1/2 cup)
12 flour tortillas (10-inch), warmed
1-1/2 cups prepared enchilada sauce
2 cups shredded cheese

Instructions

Heat oven to 350 degrees. Cook the beef in a 10-inch skillet over medium-high heat until well browned, stirring often to separate meat. Pour off any fat. Stir in seasoning mix, beans, cheese soup and onion in the skillet. Divide the beef mixture among the tortillas - about 2 tablespoons in each. Roll up the tortillas and place seam side down into a three quart shallow baking dish or 9x13-inch baking pan. Pour the remaining enchilada sauce over the tortillas and sprinkle with cheese. Bake for 20 minutes.

1989 -- 25 years ago: The Immediate Care Center emergency medical office at South Park Mall is moving back to United Medical Center on Sept. 1. After nearly six years in operation at the mall, Care Center employees are upset by UMC's decision. The center is used by 700 to 800 people each month.
