Chicken Fried Steak and Milk Gravy

Ingredients

Chicken fried steak:
2 eggs beaten
2 tablespoons milk
1 1/2 to 2 pounds cubed steaks, about 1/2 inch thick
1 cup fine cracker crumbs
1/4 cup oil
Salt and pepper, to taste
Milk gravy:
1/4 cup fat
2 cups milk
1/4 cup flour

Instructions

To prepare the steaks, mix eggs and milk. Drop meat into egg mixture, then press into cracker crumbs. Handle carefully. Heat oil in a frying pan and brown the breaded steaks on both sides. Season with salt and pepper. Cover frying pan tightly and continue to cook over low heat 30 to 45 minutes. Remove steaks from the pan and keep in a warm oven while making milk gravy. To prepare the gravy, add 2 cups milk to drippings and fat in pan. Add flour. Blend until thick, stirring constantly. Season with salt and pepper. Serve over steak and mashed potatoes.
