Raspberry Squares

Also good with strawberry, blackberry or apricot preserves or orange marmalade.

Ingredients

1 cup sugar
1 cup butter or margarine
2 egg yolks
2 cups sifted flour
1/2 cup pecans, chopped fine
1 jar (12 ounces) raspberry preserves

Instructions

Preheat oven to 325 degrees. In a large bowl, mix together sugar, butter or margarine, egg yolks, flour and nuts. Grease a 9x13-inch cake pan. Press half of the cookie mixture into the bottom of the pan leaving a 1/2-inch margin around the edges. Spread the raspberry preserves over the cookie mixture in the pan, and top with remaining cookie mixture. Pat down the top before baking. Bake for 35 minutes. Cool and cut into squares.
