Zucchini Cookies

Ingredients

Cookies:
1 cup sugar
1/2 cup (1 stick) margarine or butter, softened
1 egg (beaten)
2 cups flour
1 teaspoon soda
1/2 teaspoon cloves
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup zucchini, grated, drained of moisture
1 cup pecans or nuts of choice
1 cup raisins
Frosting:
3 ounces cream cheese softened
1/4 cup (1/2 stick) margarine, softened
1 teaspoon vanilla
2 drops green or red food coloring
1 cup powdered sugar

Instructions

Preheat oven to 350 degrees Cream together sugar, margarine or butter, and egg. Add flour, soda, cloves, cinnamon and salt. Mix well. Stir in zucchini, nuts and raisins. Drop by teaspoon onto greased cookie sheet or parchment paper. Bake 12 minutes. For frosting, mix cream cheese, margarine, vanilla, food coloring and powdered sugar. Mix to frosting consistency. Optionally, add additional sugar until frosting spreads easily. Frost cookies after they have cooled. May sprinkle with additional pecans.
