Fried Rice Casserole

1-1/2 cups cooked, diced chicken or turkey
1/4 cup cooking oil
1 cup finely chopped carrot
1/2 teaspoon seasoning salt
2 tablespoons chopped green pepper
2 tablespoons chopped onion
1 cup cooked rice
2 eggs, slightly beaten

In a skillet, cook carrots in oil until carrots are somewhat tender. Add remaining ingredients except for eggs. Cook until heated through. Stir in eggs and finish cooking until eggs are thoroughly cooked. Serves 4 to 5.
