1 stick margarine or butter
1 onion, chopped
1 or 2 stocks of fresh broccoli, cut up, or 2 packages (10 ounces each) frozen broccoli, thawed
1 pound Velveeta cheese, cubed
2 cans (10-3/4 ounces each) cream of mushroom soup
1 soup can of milk
1 box (7 ounces) Minute rice
Saute onion and broccoli in margarine or butter. Combine cheese, soup, milk and rice. Add broccoli and onion. Place in a 2-quart casserole. Bake at 350 degrees for 45 to 60 minutes.
Note: Can make ahead and keep in refrigerator a day or so or can be frozen.
