Greek Spinach

1 package frozen spinach
3 tablespoons flour
1/2 stick butter (melted)
3 eggs, beaten lightly
1 pound small curd cottage cheese
Salt and pepper, to taste
4 ounces grated sharp Cheddar cheese

Cook frozen spinach until no longer frozen. Mix flour and melted butter. Combine eggs, cottage cheese and
seasonings; add to flour mixture. Add spinach.
Place mixture in a greased casserole. Sprinkle with Cheddar cheese. Bake at 350 degrees for 30 to 35
minutes.
